Meyer lemons from Kumamoto are essential to our craft gins, 'IWAI GIN' and 'SHISO GIN.' After being carefully peeled to extract their rich, mellow aroma, the fruit itself remains. Rather than letting it go to waste, we have captured its full essence in this lemon marmalade. This is 'After the Peel.
Meyer Lemon, In Its Purest Form
The ingredients are simple: juice, pulp, pith, and sugar from our post-peeled lemons. Not a single drop of water is added. We rely solely on the fruit’s natural pectin to achieve a delicate set.
By timing the heat to the exact second, we’ve created a soft, pulpy texture that melts on the tongue. With every bite, a gentle sweetness gives way to a vibrant acidity and a pleasant, subtle bitterness—a deep, layered flavor that captures the lemon’s true essence.
